Chef Fish's early interest in cooking stemmed from being a latchkey kid and the necessity of taking care of himself.  As a child all Joe’s young friends called him Mr. Menu; he was experimenting with flavors from a very young age.  Chef Fish has more than 20 years experience in the culinary industry as well as two degrees. He earned his bachelors in Food Science & Nutrition from Kent State University and went on to graduate with Honors from the main campus of The Culinary Institute of America, Hyde Park, New York.  “I wanted to learn from the best and at the time the CIA was the toughest, most respected school in the country.” Joe completed his externship from the CIA at the world famous Savoy Hotel in London.  Before returning to the CIA, Chef Joe traveled extensively throughout Europe visiting 17 countries and participating in Guest Chef work in Paris, Amsterdam, Berlin and Munich.  Chef Fish has lived and worked in New York City, London England and Wine Country California with such notable Chefs as: the celebrated Alfred Portale, of the Gotham Bar and the legendary Anton Edelman.
